WATERMELON RADISH TUNA TOSTADAS

A healthy Whole 30 approved lunch idea that will keep you satisfied!

Ingredients

  • 1 can tuna
  • 2 tbsp mayo I like Primal Kitchen
  • 2 tbsp pickled red onion raw red onion or fresh chives can work too
  • salt, to taste
  • pepper, to taste freshly ground
  • 1/2 avocado cubed
  • 1 jalapeno thinly sliced
  • cilantro for garnish can also add micro greens
  • 1 watermelon radish thinly sliced
  • lime wedges for garnish

Instructions

  • Get a small bowl and mix the tuna, mayo, red onion, salt, and pepper until combined.
  • Fold in the cubed avocado.
  • Arrange the sliced watermelon radish on a plate and top a big spoonful of the tuna salad. Garnish with fresh jalapeno, cilantro, limes and enjoy!
