Tahini tigernut chocolate chip cookies

My favorite tahini tigernut chocolate chip cookies are here and guys these are good, like so so good! These cookies come out of the oven with crispy edges, a chewy middle, and trust me no one will know that they are gluten-free and vegan.

Ingredients

  • 2 tbsp ground flax seeds
  • 6 tbsp water
  • 1 cup tahini
  • 1 cup tigernut flour
  • 1 cup maple sugar or coconut sugar
  • 1 tbsp vanilla extract
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/3 cup chocolate chips I like to use 100% cacao unsweetened chocolate chips or Hu chocolate gems

Instructions

  • Preheat oven to 350 degrees 
  • In a small bowl, mix ground flax and water and set aside for 10 minutes..
  • In a medium-size bowl mix tahini, TigerNut flour, sugar, vanilla extract, baking powder, salt, and flax mixture. Fold in the chocolate chips.
  • Fold in the chocolate chips.
  • On a parchment-lined baking sheet roll dough into balls about two tablespoons each, smoosh down and generously sprinkle with flaky salt.
  • Bake in the oven for 12-15 minutes, let cool slightly and enjoy!
