MEXICAN CITRUS PORK TACOS WITH CILANTRO AVOCADO SAUCE

Delicious pork tacos that everyone can enjoy.

Ingredients

Pork

  • 3 pounds pork shoulder cubed into 4 inch chunks
  • 1 tbsp ground ancho chili powder
  • 1 tbsp dried oregano
  • 1 tea ground cumin
  • 1 tea smoked paprika
  • 2 cinnimon sticks
  • 2 bay leaves
  • 4 cloves garlic thinly sliced
  • 1 small onion thinly sliced
  • 1 cup fresh squeezed orange juice
  • 2 limes juiced
  • 2 cups water
  • 1 tbsp sea salt

Cilantro Avocado Sauce

  • 1/2 cup fresh cilantro
  • 2 limes juiced
  • 2 tbsp Bragg's apple cider vinegar
  • 1/2 ripe avocado
  • 1/2 cup mayonaise
  • 1 clove garlic small
  • 1 tea fresh ground pepper
  • 1-2 tea salt to taste

For tacos

  • Corn or Paleo tortillas
  • fresh cilantro garnish
  • shredded cabbage garnish

Instructions

Pork

  • Place all the ingredients inside a slow cooker and simmer on low for 4-6 hours.
  • Remove the pork from the cooker and shred. Removing any excess fat. 
  • Preheat the oven to 400 and place pork on a parchment-lined baking sheet. Crisp for 15-20 minutes. 

Cilantro Avocado Sauce

  • Place all the ingredients inside a Vitamix or food processor. Blend until smooth. 

For Tacos

  • I like to warm my tacos by caring them on the stovetop. Use tongs and burn each side for less than a minute. 
  • Fill tortillas with pork and assortment of toppings to make your own style.
