I love nothing more than seeing people happy, satisfied and relaxed after a great meal.
If I had a eat one type of cuisine for the rest of my life hands down it would be Mexican food. Tacos, tamales, to tortilla soup, I will devour it all one plate at a time especially these pork tacos.
My love of Mexican flavors got me in the kitchen at an early age, first making frozen bean and cheese burritos and topping them with Caesar salad dressing. I know sounds gross, but for a 15-year-old that would eat pretty much anything, it was a staple in my diet. I cringe now.
Fast-forward many years turning my passion for food into my personal chef business, cooking and feeding others with delicious food. To my own personal health struggles and seeking wellness through diet. Creating easy delicious recipes like these braised pork tacos from scratch, not from the freezer aisle at the grocery store.
We are all busy, I get it and sometimes we want a quick homecooked meal in a flash. Well, I have to say these citrus pork tacos aren’t that kind of recipe but you do get to toss all the ingredients in a slow cooker. Letting everything do its thing while you are on with your day. Set it and forget it! Sounds easy to me, but I’ll let you decide that for yourself.
With the warm summer months getting near, it means plenty of outdoor festivities and tacos are always a good go-to. Add a nice green salad and brown butter roasted rainbow carrots, now you have a meal. And don’t forget a fresh squeezed margaritas too.
These tacos are great for a crowd because they are gluten free, dairy free and refined sugar-free. Making sure you can accommodate everyone’s special diet these days.
I start this recipe with a pork shoulder. My amazing butcher in South Lake Tahoe, Overland Meat & Seafood will cube the meat into 4-inch chunks. Then all I have to do is plop all the meat from the butcher into the crock pot, not dirty another cutting board. Sounds good to me, and saving you time.
