Looking for a wow-worthy salad then this roasted cauliflower and chipotle chickpea salad will definitely do the trick!
Roasted veggies, spicy baby arugula, sliced cucumbers, watermelon radish, wedges of avocado, feta crumbles, and creamy herb tahini dressing is not only beautiful but filling too.
There are plenty of reasons why you would want to incorporate more plants in your life. Maybe that’s a goal of improved health, the desire to feel better, or perhaps to get that all-important glow for the day of your wedding.
That said, taking action on a decision like this isn’t always the easiest of tasks!
For many, ‘healthier’ meals might initially leave you unsatisfied. Taste buds that are prepped for excessive salt or sugar intake or those that crave fried foods may struggle with the clean switch. Let me inspire you to test the waters with this mouthwatering creation.
Roasted cauliflower and chickpea salad is a great way to change up your salad game. Roasting and caramelizing builds great flavor to vegetables that will leave you wanting more.
Roasted veggies are key components in my salads and this one doesn’t disappoint. Caramelized cauliflower and crunchy chickpeas adding a fantastic texture wanting you to dig in more.
Turn your salad game from ‘blah’ to ‘Ta-Dah!’ by upping the level of effort you put in. Getting your fill of those all-important greens should be a fulfilling and delicious experience.
But the real star of the show is the dairy-free herb tahini dressing. Loaded with fresh herbs and with that sesame creaminess, this dressing will be a new pantry staple for your refrigerator. Not just for salads guys! Bonus tip: try dipping it with roasted sweet potatoes or add to any vegetable side dish.
I hope that this salad inspires you to get into the kitchen and get curious about your food – don’t be afraid to make substitutions to suit your needs!
Toss in some leftover grilled chicken, add some nuts, remove the spice if that’s not your sort of thing and replace the feta with dairy with a dairy-free feta option from Violife. Currently obsessed, just saying.
Make this recipe for your own particular tastes, needs, allergies, and food preferences.
