These cookies come out of the oven with crispy edges, a chewy middle, and trust me no one will know that they are gluten-free and vegan. I promised my son that we could make chocolate chip cookies, life got the best of us and after dinner, he asked, “Hey, can we make cookies still?” Honestly, I was tired from the day and it was the last thing I wanted to do.
