I’m calling these pantry muffins. I know pretty basic and straightforward but fitting for the times right now. We don’t need to be rushing to the grocery store to make muffins, but we do need things to do.
This recipe is totally flexible and interchangeable with ingredients that you most likely have at home right now. Giving you something to do but a delicious treat to eat as well.
Granted, we are all stuck at home practicing social distancing during this covid-19 pandemic. I feel like I have been flying in a complete shit storm, blindfolded. Managing and figuring how to navigate my business during this time of unknown and watching my child all at the same time. Life is quite interesting, I tell you.
We have totally won the time lottery. We are at a current standstill right now, opening time for us to slow down and spend time with our families.
We are all looking for things to do to keep ourselves occupied during this time. Especially to the people that have kids. We need to keep those SWEET little monsters entertained and for YOU to not completely LOSE your SHIT. Am I right?!
Hello, I have a 3-year-old boy, that is non stop all day, very social and is not grasping why we can’t party with friends all day. Need idea?
Cooking is helping me stay sane. Granted, yes, I love to cook, but my son Lincoln loves to cook with me too! Getting dressed in his special apron, making a mess and after reaping the rewards to our creation.
We are not trying to make a gourmet dinner with our children here. We are just dipping our toes in the water here. I sometimes have my son just pick fresh thyme, a simple basic task that keeps him busy and feeling like he is contributing.
Or in this case bake with me. Which he likes better because it involves something SWEET!
We can’t just run to the grocery store and shop for every new and exciting recipe that we see on Pinterest or Instagram right now. We have to stay in and utilize what we have on hand in our pantry to cook for ourselves.
Super easy, in this case with fresh blueberries, flexible ingredients utilizing what you have in hand in your pantry. Great creative!
